Here is a recipe passed down from my family to share with all my friends. Your taste buds will be tantalized with the unique texture and flavor from this cheese cake!

 

 

 

Big Nanny's  ®  Cheesecake 

Pre-heat oven to 325º 

Ingredients: ( for cheese mixture ) 

5 eggs (separate yolks from whites)

3 ( 8 oz.) cream cheese  ( softened)

1/2 pint of sour cream

1 cup of sugar

2 tbls. of cornstarch

1 tsp. of vanilla ( or whatever flavor will compliment biscotti crust )

1 cup of whole milk

1 tsp. of cream of tarter ( for egg whites only )

 

Ingredients : ( for crust)  * ( note :  Please make crust first ! )

 

1 cup of  FINELY ground biscotti crumbs ( your choice of flavor)

1/4 cup of sugar

3 tbls. of melted butter

  

You must use a 9 inch spring form pan. ( grease bottom and sides well )

 Melt butter and add sugar and crumbs  ( stir well )

 Pour crumbs into pan and lightly pat down along bottom and sides of pan ( set pan aside until cheese mixture is made)

 

 In separate bowl add 5  EGG WHITES and 1 tsp. of CREAM OF TARTER . 

Beat egg whites until stiff peaks form. ( set aside)

In a large bowl blend all ingredients for cheese mixture in order listed. 

Mix on medium to high until a smooth consistency is formed. ( NO LUMPS) 

FOLD  GENTLY, egg whites into cream cheese mixture and pour into crumbed spring form pan.

 Place in the center of oven and allow to bake for 1 hour at 325º. ( place a sheet pan on a lower rack to catch any drippings from spilling onto the bottom of your oven.) 

DO NOT OPEN OVEN DOOR!

After one hour of baking turn oven off. 

Allow  the cheese cake to remain in the oven for one more hour. Door closed! 

Now you may remove cheese cake. : )

With a sharp knife, go along the side of pan and release the cheese cake from the side.  This prevents sticking.  Allow to cool at room temperature before releasing the cheese cake from the spring form pan. Once brought to room temperature place in the refrigerator.  Best served cold. 

 Serve with your favorite fruit or sauce.  This is a light and delectable cheese cake.
